Ducasse himself has traveled to the origin, in searching for perfect cascara. His head roaster, Veda Viraswami finished third in the World Coffee Roasting Championships and is central to Le Café, echoing Ducasse’s vision into reality. Bringing the style of haute cuisine to coffee.
